As I have toyed with the idea of working outside of the home, I have been trying to think of quick meals and snacks that would be portable and satisfying. I had a similar recipe to this one on my blog back when I was working full-time, but it was in bar-form. I like the idea of making cups . . . so that’s what I did here.
You could do all sorts of things with this recipe. Add chocolate chips. Add more sweetener and some cocoa powder to make them fully chocolate. Add raisins or dried cranberries and walnuts. Use almond butter. It’s really up to you. The result is essentially a little serving of baked oatmeal.
Story time: I have mentioned it before, but I had a cookbook deal in the height of my blogging days. A publisher approached me to see if I would like to write a cookbook on all things you can bake/make in a muffin tin. I spent the bulk of a month developing recipes and photographing them with fun props I had purchased from a local antique shop. Toward the end of getting everything together for the final pitch (and it was a lot of work!) we found out my oldest needed brain surgery. My priorities changed significantly over the whole next year, and that cookbook never came to be.
Funny how life throws stuff at us, right?
