Having fudge in the refrigerator is the best thing ever. It brings joy to my life. And when it’s my favorite flavors — chocolate + peanut butter — it’s even better. This recipe is one I have toyed with over the years, and I highly recommend making your own peanut butter (don’t worry, I have all the directions below) because it makes the texture a-m-a-z-i-n-g.
This recipe yields enough for a party . . . or a family of 5 that loves desserts.
SIMPLE PEANUT BUTTER
You need:
16 ounces dry-roasted peanuts (unsalted)
1 tablespoon virgin coconut oil
To make:
Add the peanuts to your food processor, process until they ball up, about a minute or two. Then add the tablespoon of coconut oil and process another few minutes. Mine became smooth peanut butter in 4 minutes total.
If you are using this as peanut butter, feel free to add salt and cane sugar to taste. It makes approximately 1-3/4 cups.
If you’re using it as the base for your fudge, keep it plain and scrape all the peanut butter into a small saucepan. Set aside.
