This is one of those recipes I have committed to my memory. I whip it up really fast when I know the kids will be home soon with hungry tummies. I personally like eating these cookies when they’re just setting up and still somewhat soft and goopy. But if you like them fully set, you’ll need to think an hour in advance.
They don’t look particularly impressive, but they pack some major flavor. The best part? You likely have all the ingredients on hand to make them — and they’re highly adaptable. Sometimes I toss in hemp hearts instead of coconut flakes.
