I had different recipe planned to share today, but life happened. I decided to make my family’s favorite sick day soup instead. This soup is basically chicken noodle soup with tofu in place of chicken and pastina in place of noodles. You make good use of mixed frozen veggies and it cooks in a flash — in the Instant Pot or on the stove top — which is exactly what you need when you and/or your kids are feeling under the weather.
It’s a complete meal as is, but you may serve with whatever you like. I had started a batch of sourdough discard bagels (cinnamon-raisin!) yesterday. Seems like an odd pairing, but everyone is excited for this meal.
