Today’s recipe is one I have been making for many years. It’s actually adapted from a similar recipe in my grandmother’s recipe book that my uncle made after she passed in 2014. I made it vegetarian. Added beans, too. I also swapped out the premade pie crust she used with homemade biscuits for topping.
My kids literally shout for joy when I tell them I have made this for dinner. It’s really comforting this time of year when the weather is frigid. It makes the whole house smell cozy. And — while it seems intimidating — after you make it a few times, it becomes very easy to put together.
I also figured that, since it’s Friday, I’m throwing in a bonus free recipe for all of you (paid and otherwise) for her peanut butter fudge. Super simple, delicious, and would be great to make with kids:
