I have been experimenting with some recipes using a faux sourdough discard. I realize that sounds weird, but there are lots of great cookies and bars, etc. that get some extra binding action and flavor notes from discard — but not everyone has it on hand. This was my first attempt of changing one of my discard recipes in this way. I hope to expand on it in the future, so stay tuned.
Anyway, I’m trying to get better at giving my kids (and myself) some variety at breakfast. It’s the meal I put the least energy into, and I feel like I personally skip it pretty often. The girls are bored of baked oatmeal or cinnamon toast with fruit or yogurt parfaits. I made this last night, and it was a hit with them this morning.
PS: If you DO have sourdough discard, please read the recipe notes for how to use it.
